About the Author

Cheryl Day and Griffith Day are self-taught bakers who founded Back in the Day Bakery in Savannah, Georgia, in 2002. I was a little worried that the authors wouldn’t be able to accurately scale down their recipes from the volume they make for their retail operation, but so far that has not been the case. And there is a lot of good basic information about how to prepare the ingredients, why some things that seem trivial (like the correct temperature of butter to be creamed) are actually crucial to achieving a truly special finished product. The picture is of the first recipe, for Biscones. (I made the blueberry version and the blue color ran all through the dough.). It happened to be my birthday, and lacking a candle, I stuck the match into one of them. Better than a cake!
