This book book name: Easy Chicken cookbook evokes an ease of making all these recipes so the 6 chapters should not be surprising:
**** Chicken Made Simple
**** 5 Ingredients or Fewer
**** 30 Minutes or Less
**** One Pan
**** One Pot
**** Pressure Cooker or Slow Cooker

I have a criteria that when I see a cookbook in a store, that I use whether to buy it or not. I think we all have some system to determine where to spend our hard earned money. This happens to be mine and it has served me well: See this below.

1. Does the book have pictures or illustrations of some type to either entice or guide me?
2. When I randomly open a page to 10 recipes, are at least 5 compelling enough to entice me to try them?
3. Can I buy locally the ingredients of the recipes (let’s face it, we all don’t decide to cook something well in advance when specialty items can be ordered).
4. How long is the ingredient list? 10 or more items (not including dried spices or salt and pepper) become less likely to be cooked.
5. How many steps are involved. This criteria depends on the detail in the steps, if they are simple the list can be longer, if involved, can only go so far before intimidation sets in.
6. Finally the ingredients have to be stuff I like. This is not so useful to those of you reading the review, but I will explain when this is a factor below.

PICTURES: Not nearly enough for my liking.
There are very few pictures in this book of the items within. The book has 142 pages and less than 12 photos. I struggle with the lack of pictures. When we eat, we start by consuming with our eyes first. In another book on Curries, I relaxed this criticism somewhat as a curry is a curry and they tend to all look similar. But that book had more pictures than this one.

ON A RANDOM CHECK DO I FIND FIVE OUT OF TEN RANDOM RECIPES THAT LOOK ENTICING: Since I already have this book, I’ve had more time to go through it and can say that at this moment there are 9 post it notes sticking out of the pages, which tells me, it has potential. However looking at these recipes a high proportion are pan seared.
1. Creamy Yellow Coconut Curry
2. Maple and Mustard Glazed Chicken Breasts
3. Crispy Baked Panko and Dijon Chicken Tenders
4. Pad Thai with Crunchy Peanuts
5. Classic Chicken Piccatta
6. Orange Marmalade and Mustard Braised Chicken with Apples

7. Spicy Red Curry Tikka Masala
8. Pot Roasted Chicken Breasts with Root Vegetables
9. Tropical Chicken with Pineapple and Coconut Rice

INGREDIENT LISTS ARE SHORT:
For the most part the ingredients are not only few, but easily obtainable in the US.

STEPS ARE FEW:
Of the 9 recipes that caught my eye, the longest list of steps are 7. Most are 6 or under.

THINGS I LIKE:
Well this will vary with everyone. I had marked these 9 as these were the ones that seemed the most compelling. I tend only to like chicken breasts as I don’t like the texture of chicken thighs and I don’t like chicken with tomatoes. Chicken Cacciatore is something I can’t stand. And I’m not a fan of enchiladas or the like. So quite a few recipes went by the wayside.

IN SUMMARY:
While this book does have 9 recipes that I found interesting. There are only a few more that catch my eye. They are just okay. I’ve earmarked these so I would be inspired to cook them. But it surprised me that I really only found 9 things that compelled me to put a post it note on them after paging through the entire book. Had I just manually paged through this book and did my normal quick check of 10 recipes, this book might not have passed my criteria on having a predominance of things I like, but this is mainly due to my food biases and not any other criteria.

I love trying new recipes, and chicken is a favorite in my house. I have now made several recipes from this cookbook, and my whole family has enjoyed the meals I've made.

The book is divided into six chapters based on preparation: 5 ingredients or fewer, 30 minutes or less, one pan, pressure cooker or slow cooker, etc. I like this organization, as I can easily find a recipe based on the complexity I’m looking for. Near the end of the book, there’s also a section that organizes the recipes based on cut of chicken, making it easy to find a recipe for whatever I have on hand at the time.

So far I've made the following recipes (with many more marked to try later):
Pan-Seared Lemon-Pepper Chicken Breasts
Cheesy Chicken Enchiladas
Caprese Chicken Burgers
Shredded Teriyaki Chicken

I like that there's even some recipes that I can make in my slow cooker or instant pot, two of my favorite appliances. Each recipe has a line that gives a one glance description that is convenient when cooking for specific needs (dairy-free, gluten-free, family friendly, beginner, etc). My tween daughter is lactose intolerant, so it made it easy for her to tell if a recipe would work for her in a quick glance. The recipes include number of servings, prep/cook time, nutrition facts and sometimes tips, so it is very comprehensive.

I have really enjoyed using this cookbook and look forward to trying even more of the recipes. The meals taste great without being difficult to make, so it will get used a lot for future meal ideas!

Like many Americans, we use chicken in a lot of recipes. It is a relatively inexpensive meat, and it comes in a variety of forms. My favorite are boneless, skinless chicken breasts. My wife likes to try new things, so she thought this cookbook would offer some fun and easy recipes to add to her repertoire. Sadly, she was disappointed.

First, let me say that this is a beautiful cookbook. The author has lots of full-color photographs and everything is laid out in an aesthetically pleasing way.

Second, it's divided up into several different types of recipes, which is nice. There are six chapters: 1) an intro to how to handle and prepare chicken, 2) a section with recipes that use five ingredients or less, 3) a chapter with recipes that take 30 minutes or less to prepare, 4) a unit with recipes that can be prepared in a single pan, 5) ones that only require one pot, 6) a chapter of all crock pot recipes. All of these are intended to make it easy to find the recipe that best fits your most pressing need.

Third, most of the recipes seem fairly easy to follow. The author starts with the name of the dish and its description. Then she lists the ingredients. Across from that are the instructions. Most of these meals take four to six steps to prepare.

My first issue is that the many of the recipes call for exotic ingredients we don't generally keep in our kitchen. Or they call for ready-made products, such as special sauces and whatnot, that we also don't prefer. When we are looking for a new recipe to try, we'd rather find something that uses stuff we commonly have on hand, rather than plan far enough ahead to go buy a bunch of fancy stuff.

Second, when prepared according to the instructions, the food is kind of bland. The author uses a good deal of salt and pepper, but most of the recipes don't have much "zing" to them. My wife found herself adding spices to bring the recipes up to par.

Third, the index wasn't too helpful. There's one index that lists recipes according to the cuts of chicken used. Since my wife generally just uses boneless, skinless breasts, this wasn't particularly helpful. The second index lists the recipes by name and key ingredients. The problem is, if you don't know the name of something, you don't know what to look for. If you find a recipe using one of the things you have on hand, you may find it's got a bunch of other stuff you don't. My wife pretty much ended up thumbing through the book each time she wanted to try something until she found what sounded good and doable, rather than using the index.

Finally, while the book tells you how many carbs and grams of fat, carbs, sugar, fiber and sodium are in each serving, it doesn't indicate the serving sizes. So you can't be sure how much you are actually getting. There's nothing about vitamin or mineral content, either.

My wife has a lot of recipes for chicken, but she really didn't find any in this book to add to her list of options. If you enjoy a bland diet, this book may be adequate for you. However, if you prefer more pizazz, using common, simple ingredients without a lot of processed components, this is probably not your best choice.

This book is definitely geared toward people who are looking for mostly familiar tastes. There are few exotic ingredients and most of what is included can be purchased at average grocery stores so it works for those who don't have access to ethnic markets. The first section is full of tips for how to handle and cook chicken and should be read by people who don't have much experience cooking chicken or who tend to have issues with it drying out. There are also tips scattered throughout the recipes and I think those should be helpful to beginners as well.

I went through the entire book and marked recipes of immediate interest to me and there were a handful. There are definitely recipes of secondary interest as well so I think there is certainly enough variety to appeal to people who want to add more chicken to their diet, but are bored with what they've been preparing. In terms of the balance of recipes, I realize that this is a brief book, but I would have liked more chicken burger recipes. There are plenty of sandwiches, but few recipes for ground meat.

I liked that there were some recipes which were styled after popular food which may be inaccessible to people who don't live in urban areas (e.g., schwarma, gyro-style), though the loss of the more sophisticated methods of how these recipes are prepared means it won't taste the same, but just carry some of the essence of them.

I didn't mind that there weren't a ton of pictures in the book. There are some at the head of each section to give you some idea, but this isn't a book for someone who wants lavish illustrations. In some ways, it's better not to have a ton of beautifully styled food pictures because you won't feel bad if your results don't mirror what is on the page. All in all, I think this is a good addition to a recipe collection for someone who just wants to shake up their game when it comes to how they prepare chicken. If you're an advanced cook, however, it probably isn't going to bring enough complexity to the game for you, but it does claim to be "simple meals," so that isn't a demerit.

This is a decent Chicken Cookbook. It's divided into sections nicely, so it makes finding recipes easier. There are sections for: 5 Ingredients or Fewer, 30 Minutes or Less, One Pan, One Pot, & Pressure Cooker or Slow Cooker. There is also a section in the back that is helpful if I'm looking for recipes for certain cuts of chicken (ie: drumsticks, thighs, cutlets, whole, etc). This section has the recipe name and page that it's on. Basically if I have a pack of Boneless/Skinless Chicken Breast then I can go to that section and look for recipes that specifically use that cut of chicken. This feature is quite handy.
Overall the recipes seem easy to follow and most of them are good. There is a range of cooking abilities in this Cookbook, so don't think just because it's title is "EASY Chicken Cookbook" that all the recipes are easy/novice. There are some simple recipes, but there are some more skilled recipes too.

The problem with chicken is that it's like white bread. You can dress it up all you want but deep down it's still white bread. Beef will pick up the flavor and consistency of the how it's cooked and what it's cooked with. I was hoping that a cookbook dedicated to only the bird would offer something new and innovative. I know people who only eat chicken as their "living" protein. Boring.

I found just a couple of recipes in this book that made me want to make them. One is the Orange Marmalade and Mustard-Braised Chicken with Apples. The other is the Smoky Chicken Street Tacos with Pickled Red Onions. I made this one and even though I lived in Mexico for several years I found the smoked peppers in adobo a bit heavy handed. The recipe calls for 2 or 3 cans. This recipe is good but take my word - start with one can and taste as you go.

I give this book a pass.

I am fairly good at preparing chicken meals from memory but that's only if I go by the 5 recipes that I know. Everything else, I need a cookbook. Sheila Thigpen's "Easy Chicken Cookbook: 75 Simple Meals for Every Day" is fantastic in that it is easy recipes with affordable ingredient lists and a nutritional breakdown for each recipe.

I like the variety. The chicken, zucchini, tomato and cannellini bean stew with toasted garlic bread (page 92) has been an instant favorite. I like how it is organized (One Pot, 30 minute, One Pan, 5 ingredients or less). It just gives options that work for my family. Chicken may not be as 'cheap' as it used to be, but it is still budget saver when bought in quantity. It is a simple and plain cookbook but one that is meant to be used.

Who doesn't like chicken? If you are looking at this cookbook you probably do.

This is a well-written cookbook, it even includes some simple recipes for sauces and side dishes.
Each recipe has a list of needed ingredients, easy to follow step by step guide, "ingredient tips" and basic nutrition facts.
As a diabetic, I find that having nutrition facts in a cookbook is a necessity.

I think my favorite recipe so far is on page 51, it's called "Creamy Chicken Carbonara", it only takes 10 minutes to prep and is absolutely delicious.

Yes, I would recommend this to a friend, and it would make an excellent gift for the foodie in your life.

I didn't find a lot of recipes I really wanted to try in this cookbook. It's organized decently enough based on one pot, one pan, 30 minutes or less, etc. However, the five ingredients or less section definitely includes recipes that need more than five. Plus, the other sections have a lot of seasonings which isn't bad, but can be kind of annoying as you're adding a half tsp of this and a half tsp of that. Sometimes simple is better. Anyway, needs more pictures and the few recipes I did try were okay. At least chicken is flexible enough to add a variety of flavors to, so it might inspire you to do more with your chicken if nothing else.

This is a well laid out book. There is a section in the beginning about the basics of cooking with chicken, including how to thaw it correctly and what the different cuts are. There are a few pictures, like at the beginning of each chapter, but there is not a picture for each recipe. A nice feature is a list, in the back, of recipes by cut, so if you want something for chicken breasts, you can turn to that list to narrow your choices.
