About the Author
Dominique Ansel, a James Beard Award-winning Pastry Chef, is the chef and owner of eponymous bakeries in New York, London, and Los Angeles, as well as his first-ever restaurant in Los Angeles. Ansel has been responsible for creating some of the most celebrated pastries in the world, including: the Cronut(R) (named one of TIME Magazine's "25 Best inventions of 2013"), The Cookie Shot, Frozen S'more, Blossoming Hot Chocolate, and many more. He was named the World's Best Pastry Chef in 2017 by the World's Best Restaurants awards. Food & Wine has called him a "Culinary Van Gogh" while the New York Post coined him "the Willy Wonka of New York." There is a lot that is daunting about patisserie. For civilians you just stand there with jaw dropped thinking how do they do it. Or as I did once in a chocolate shop in Paris, just stand there and inhale. This book tells and importantly shows civilians how it's done. Still daunting, but if you follow the very clear instructions and pictures you can produce your own. It might be slightly wonky at first go, but don't be downhearted, but it will taste and look delicious.

This is an absolutely brilliant book, wish it had been around sooner. It is so informative of all sorts of levels and although I have not tried any recipes I will be doing so soon as have a Birthday coming up. He explains things that no other books do.

Ein wunderbares Buch. Ich kenne den Autor schon aus einer Masterclass und bin seitdem begeistert. Am meisten gefällt mir das Baukastensystem des Buches - man lernt viele Basics, die sich wunderbar kombinieren lassen. Anschließend sind der Phantasie keine Grenzen mehr gesetzt. Die Erklärungen sind sehr gut gemacht, falls man sich aber trotzdem nicht sicher ist (kam bisher bei mir noch nicht vor): einiges wird in Videoform auf dem Instagramprofil von Dominique Ansel nochmals gezeigt. Bisher haben die Rezepte beim ausprobieren auch gut funktioniert und waren unglaublich lecker. Klare Kaufempfehlung für alle, die ihre Backkünste aufs nächste Level bringen wollen!

The mystery of the extra glaze

Salivating over the photos and recipes included in this book, it didn't take too long until I tried my first recipe - a salted caramel chocolate tart. You will need to three separate recipes to make this tart - one for the base, one for the chocolate ganache filling and one for the caramel glaze.
When I got to the recipe for the caramel glaze, I was astonished! The quantities given are for one standard cake or tart plus for some leftovers! What is the purpose of this extra glaze? What is the author trying to tell us with this? And what is the meaning of a fridge full of extra glaze (each time you bake a cake from this book, you end up with a jar of glaze in the fridge)? And finally, do the jars of extra glaze in the fridge come to life when I'm not looking?
This is the real mystery of the extra glaze. And baking one cake and one tart at a time, I will now embark on a journey. And I hope that at the end of this wonderful journey I will have solved the mystery of the extra glaze.
