This book has a lot of creative meal prep ideas that I've never thought of. Since the author is a nutritionist the recipes are super balanced and healthy. I like that the book doesn't call for "diet foods." All the recipes are made with real, whole foods. So far I've made the Crispy Fish Tacos with Cilantro Lime Crema (page 67), Chicken Gnocchi Soup (page 52), Southwestern Turkey Veggie Skillet (page 53), the Thai Red Curry with Chickpeas and Bok Choy (page 63) and the Lemon Blueberry Silver Dollar Pancakes . I loved all of these recipes so far- they're very EASY! My mom already made the Smoky Chicken Tortilla Soup and we both loved it.
