very well done

It is one of the better books or I should say best books, worth the money. Pictures are perfect and do not disappoint. If you have an instant pot than give this book a try. He is not an amateur.

A GREAT NEW INSTANT POT COOKBOOK FROM A CURRENT KITCHEN GURU!
Reviewed in the United States on 19 January 2020
I was an Instant Pot holdout. I simply couldn't believe that an electronic crock pot (a crock pot!) would - or could - provide the textures and deep flavors of long, slow cooking. And then, several weeks ago, I gave in to impulse and purchased a Instant Pot Nova Duo 6 quart. And.....it's simply wonderful. And so when this new cookbook became available for review, I jumped at the opportunity to learn how to use - and adapt - both pot and recipes to this new approach to cooking. The main reason for this is that Christopher Kimball and Milk Street were familiar to me. My wife subscribed to their magazine awhile ago and we have enjoyed making many of the delicious recipes that he/they have provided.
First let me point out a concern I have - not with the cookbook, but rather with the previous reviewers who criticized it for having black and white images. Those off us fortunate enough to have received an advance reading copy for review, have a marketing proof copy. This clearly states that the final version will become more widely available in April 2020. It is safe to assume that the final published copy WILL have color photographs. (If it does not, I will edit my review - read more by clicking below)
I simply love this cookbook. Heavy emphasis on vegetables with deep sections on beef, pork, chicken and beans/grains. It's unique niche is that it provides fast/slow alternatives for cooking each recipe - as you can tell from it's clever title. So naturally, I had to try the variations of several recipes in order to see whether or not a) the recipes were in fact good (!) and b) whether or not the Instant Pot is all it's cracked up to be.
Good news - both the pot and Milk Street Fast & Slow are excellent! While I still come down on the side of slow cooking for overall depth of flavor, it is nothing short of astonishing what the Instant Pot can do in a short period of time, i.e., when you come home from work and have a hankering for something like Chicken Rogan Josh. (OK - who does not hear Josh Rogan chortling "Oh, yeah!" upon reading that? For such heavily spiced foods, fast cooking is ideal and really does not detract in any way from the slower version. Each was delicious.
For beef/lamb stews I may still prefer slow cooking in either a dutch oven or tagine, but once again - the fast methods provide a more than acceptable (in fact, downright delicious) culinary experience. Beef stew with Paprika and caraway was a new combination for me (and Milk Street's reminder to crush the caraway seeds was a much appreciated note) and was one of those home from work, mid-week meals that never would have been possible before.
It is the recipes for grains and beans however that were revelatory. No need to soak the latter overnight, and no discernible difference in fast/slow preparation. These recipes provided a completely new avenue for using these ingredients during the week when time was a precious commodity.
I'm looking forward to taking a deeper dive into this cookbook and my instant pot! Once it becomes available, I'm sure that I will gift copies to family members with recommendation for try some of my favorite recipes in it. And that is the highest compliment I can give.

Disappointing
Reviewed in the United States on 17 April 2020Verified Purchase
No look inside, so going by the description I thought this wouldn't have the standard lineup of pressure cooker recipes - WRONG. ~1/2 are soup, stews, ..., then variations on pot roast, pulled pork/chicken, pasta,... Really none of the recipes were innovative enough to motivate me to try them. Returned it unused.
