ROBERTO SANTIBANEZ is the author of two cookbooks, Rosa's New Mexican Table and Truly Mexican. He is the chef/owner of Fonda Restaurants in New York City. The president of Truly Mexican Consulting and a member of The Culinary Institute of America's Latin Cuisines Advisory Council. He was born in Mexico City and is a graduate of Le Cordon Bleu in Paris.
