“Falestin” is an interesting cookery book, as a Middle Eastern with a twist, Ottolenghi style, with some folklore intermingled and an overall feeling of “lets talk about the occupation”. I have been working for many years with Falestin and Sabra -Israel born- people, and till this day, is not very clear to me what a Palestinian is. Many Palestinians -between the safety of privacy- do agree with me. So when it talks about tradition of the Palestinians, this book gives the impression that Palestinian is an ancient and homogenic nation of people: it is not. Palestinians are a mix of Bosnian Muslims, Egyptians, nomads, Lebanese, Jordanian, Syrian, that came into the land relatively recently and acquired an idea of homogeny for political purposes under Arafat. Today to be a Palestinian means you are a “resister” of the occupation. But Palestinians are not Canaanites. No. Not at all. Though they like and learn at school that they are and that they were occupied by different cultures ever since. This is not true. May be a bunch of shepherd or two came from the Canaanites but thats all about it. So the rubbing of these polarization in a cookery book it is not really where I would like to stand when interested in cooking. Jewish food is not about nazi Germany, though the Palestinians keep on wrongly comparing the Holocaust with the occupation. Many places were populated, many were just swamps filled with Malaria, but Palestinians claim that all belong to them. This is quite ambitious, to say the least... So this is what this book raised in me. I still give Sami 4 stars, because I still liked the recipes and stories, but the lacking star has to do with these muddy waters that in the end make me question its authenticity.
