Although this is a classic and almost indispensable for north-European cooks, I was quite disappointed with this edition (I have a very old paperback version which is falling apart). It seems hardly updated, rather many uninformative and unhelpful 'stylish' pictures have been added. Much more of a publisher's revision than driven by the culinary profession, I think. For example, still no entry for umami which at least should get a mention in an 'encyclopedia', even if the French don't like the Japanese muscling in on their territory. Nevertheless, an excellent reference work, and the maps are very informative and well done. If you want it as a reference book, then I would recommend buying a cheaper, perhaps second-hand edition. But a great present for a young aspiring cook in the family!
This is a wonderful book and should be with anyone connected anyway with cooking. The two stars are for the piece sent to me, the top covering cover is torn and inside the book is also torn. Looks like an old piece which could not be sold offline has been sold online.
Pensavo fosse differente: È strutturato come un dizionario anche i caratteri sono un po' piccoli.. È tutto in ordine alfabetico sono descritti anche personaggi del passato o presenti attinenti al mondo culinario, le ricette secondo me sono scritte un po' troppo alla spicciolata mi aspettavo anche una parte un po' importante sui vari tipi di cottura...io preferisco quello di Paul Bocuse non c'è proprio paragone
Great cookery resource - but I wish they hadn't plastered an endorsement by Gordon Ramsey all over the front cover. Ramsey is not fit to lick Larousse's boots and his name is an embarrassment on such a revered tome as this.
One star due to presentation, and another for informative written content. HOWEVER, This is not the English translation of Larousse's Comme un Chef. I wish I'd looked in the shop. Downside is, most retailers have the cellophane around it, so I peaked in the softback and I'm assuming it's the same thing. It truly is an encyclopaedia. It is laid out and looks like one. It doesn't have as many pics as 'Comme un Chef' which is highly disappointing. My only comfort I guess is I got it for 35GBP instead of 60GBP RRP. Interesting that some Chefs put their names behind it and call it a bible. I'm not convinced. I have 'Comme un Chef' and it is leagues above the recent outing by Larousse. That book was more expensive, but perhaps that has exposed my naivety. :-( It may be for some people, but I'd advise people to serious browse through the book cover to cover, else it could end up being an expensive door stop.
