Paull's Beatrix is a delightful combination of excellent, well-researched recipes and just the right amount of personality that helps communicate the desired outcome - a belly dancer's jiggle as the preferred quality for when the cheesecake comes out of the oven comes to mind.
Combined with the clear recipes, there are excellent roundels of how to combine and layer different parts of the book into different finished desserts, multiplying the possibilities endlessly.
Finally, the margins contain delightful little "Adaptrix" options, where Natalie recommends swapping out products for different options and what to do if you get something a little wrong.
This is, without a doubt, one of my favourite books that I have comfortably baked over 50% of the possibilities. The roundels, Adaptrix and general quality of the riding mean you never feel alone on your baking adventures, the writing communicates clearly how to progress and when you inevitably err there is a lovely little sentence or note that can get you back on track.
I generally think I'm a good baker, and that I have fairly good knowledge. But this book has upped my game massively. It has been my favourite lockdown read so far, and coupled with a lot of feedback from the author on people's instagram posts, I have learnt so much. Every direction has been good. AND there are lots of tips about how to adapt recipes if fruits are out of season or you prefer a different type of finish. It's great.
