I have loved to cook Japanese for a very long time. My library of cookbooks has many volumes to prove it. When I pick up Chef Liaw's book, there is a feeling that comes over me that I can only describe as "zen-like". I'm not kidding! The book design and graphics are beautiful. The recipe categories and their layout makes wonderful sense. I have to say that this is now and forever my favourite Japanese cookbook. You must buy this book if you've to cook Japanese food. This is an amazingly well researched, and written cookbook with the home cook in mind. Paying attention to the details, explaining why things work, and focus on teaching the uninitiated are what make this book excellent! I have tried a few recipes, and they work beautifully! I've made a few recipes from here so far and they've all been great. Just tonight we did the vegetable skewers with miso-dare and they were a huge hit. Teriyaki sauce recipe is amazing and so easy there's no excuse whatsoever to buy a crappy bottle of it. Oh also, his epilogue to this book about the memories created by food actually made me cry a bit--a first for a cookbook.
