How are ratings calculated?
To calculate the overall star rating and percentage breakdown by star, we don’t use a simple average. Instead, our system considers things like how recent a review is and if the reviewer bought the item on Amazon. It also analyses reviews to verify trustworthiness.

Great buy for the beginner or you need to review a skill or two. Wish I would have had this when I was training new food service crew for the Coast Guard. Also great help around the holidays.

5.0 out of 5 stars Prep School Is A Real Winner!!

Anyone who ever worked in a restaurant will tell you that 'prep' is the key to turning out fine meals in volume and any chef will tell you the same for individual dishes and meals. This book tells you how to get ready to be a Ninja Chef and outclass those neighbors who still use the haphazard home method of doling out the ingredients while cooking the meal. It's full of tricks and tips for the beginner to the pro. I highly recommend this as an essential volume in any serious cook's cookbook collection. It's as basic a kitchen tool as a mortar and pestle or a knife.

5.0 out of 5 stars Very happy to add this to my cookbook collection

This is a book to read in pieces, a how-to reference book, so I am reviewing based on the sections I've read so far. As a woman who knows her way around a kitchen I was impressed and grateful for the resource. Forewarned by the reviews complaining about formatting problems, I downloaded it instead to my Cloud Reader, and it worked fine. The Table of Contents was clear to understand and hyperlinked within the book. The wealth of information impressed me greatly, and in the first half hour of reading I learned so much to add to my already decent knowledge of prepping techniques. The photographs are sharp and useful.

5.0 out of 5 stars Informative Read
Reviewed in the United States on 9 December 2012

As a guy who is an inspiring chef and spends hours watching the cooking channel, I needed something that was not only affordable, but informative as well. This book is full of information on cooking, the techniques involved, and also has pictures to further explain how something is done (cutting, pulling out pin bones, etc..). While I have not finished it yet, so far I am impressed and the author has provided within the chapters skills that should be practiced with detailed instructions on how to execute the task. A great read if you are just learning like I am!

5.0 out of 5 stars Amazing book

I'm an older female adult, and have cooked for quite a long time, but I picked up some hints and couldn't believe how thorough this book is. It is truly amazing, and would be wonderful for someone just developing their cooking skills - you will not be disappointed, though regardless your level.

Talk about a great explanatory book on cooking! It gets down to the nuts and bolts of why I do a lot of the things I do...as well as gives great ideas on how to do things more efficiently and how to make things a lot tastier with simple techniques. Love it!
