I bought this because of all the hype about Zingerman's bread. I am an avid sourdough baker. I tried the Zingerman's approach to sourdough and it results in very heavy, dense bread. It's not the light, airy sourdough that I am used to. I have modified some of the recipes for my standard 100% hydration starter and they came out OK. The best part of the book is reading the story line that runs through the book. The recipes are so-so.
So disappointed with this purchase. You won't meet anyone more excited about Zingerman's than Alygirl and whenever near Ann Arbor I'm there buying their bread because it is the best I've tasted - besides my own. But this it NOT a cookbook for regular people and didn't include some of the items I am expecially fond of. I offered some feedback via email and was pretty surprised with the "help" offered. It was an uncharacteristic Zingerman's experience for me. It is a heavy book and will make an impressive doorstop but I regret buying it.
However, I will continue visiting the Bakehouse any chance I get!
